Continuing 50 years of family tradition, the Distillerie Chelo was founded in 2004 by Michel Sajous. Located in northern Haiti, in Saint-Michel de l'Attalaye, it is surrounded by a 30-hectare plantation where the non-hybrid variety of sugarcane cristalline is grown. Fermentation uses natural yeasts and lasts five to eight days, producing a clairin that is distilled in a direct-fired still fuelled with bagasse (fibrous sugarcane residues). With complete freedom of tone, this bottling explores astoundingly original aromas, from medicinal tones to pharmaceutical notes and bursts of spice.
