Under the hot and humid subtropical climate of Taiwan, temperatures inside the warehouses can rise to 42°C, and the angel’s share can reach 12% per year. To combat this evaporation, the Kavalan distillery inaugurated a third concrete warehouse at the end of 2022, equipped with a ventilation system, larger than the two previous five-story warehouses combined. Particularly expansive, this version that has matured in one of the old warehouses goes beyond its natural borders to vividly demonstrate that aging in port casks suits Kavalan perfectly.
