A cracking little bottling from Signatory Vintage’s Un-Chillfiltered Collection. This time round they’ve turned to cult distillery Ben Nevis.
Known for its old fashioned style of whisky, Ben Nevis distillery produces a weighty, chewy spirit. It is the last distillery in Scotland to use brewer’s yeast for fermentation.
This particular bottling was distilled on the 5th of February 2010, and bottled on the 2nd of April 2020, having been aged for a decade in a single refill butt.
The result is a crisp, waxy and fragrant whisky which serves up notes of lemon peel, tea cake, sweet oak, vanilla, slight grass, pears, honey, beeswax and malt.
A classic Ben Nevis, presented without chill filtration and colouration, and at 46% ABV, ensuring the whisky’s richness and body.
